Our Summer Nature Program on Long Island

In May, the Usdan staff announced the cancellation of in-person camp for Summer 2020. You can read the full announcement here.

This summer, we are excited to launch Usdan Online: Usdan's online arts education program. Usdan Online aims to provide excellent arts instruction and to create a thriving community of young artists that is not dependent on being together physically. Learn more about Usdan Online here. 

Hands-On Ecology & Gardening Classes For Kids

In our hands-on nature program, students study the art of planting, growing and cultivating food by caring for Usdan’s own fruit and vegetable gardens. Exploring the flora and fauna in Usdan’s idyllic woodland forest allows students to understand the delicate relationships at the heart of Long Island’s vibrant local ecosystem. In an innovative course on sustainable art, students are challenged to combine art, science and empathy to identify creative and sustainable solutions to pressing environmental problems. Students also care for the Nature Department's pet snakes, lizards, and tortoise.

This dual program will engage students in the miracle of seed to harvest, enhance their understanding of different flavor profiles, and connect them to the creativity and enjoyment of those efforts through hands-on culinary instruction. In the garden, students get to plant, care for and harvest food from Usdan’s fruit and vegetable gardens, as well as eggs from Usdan’s chickens, with a gardening specialist. Students will utilize the bounty of our gardens with a cooking instructor to create a variety of dishes for all to enjoy. In the kitchen there will be an emphasis on knife skills and safety, cooking weights and measurement and both following and writing recipes. Please note that our kitchen is not kosher and if you have any dietary restrictions please contact us as soon as possible. Additional fee of $600 for 7-weeks, $350 for 4-weeks and $250 for 3-weeks.

This dual program will engage students in the miracle of seed to harvest, enhance their understanding of different flavor profiles, and connect them to the creativity and enjoyment of those efforts through hands-on culinary instruction. In the garden, students get to plant, care for and harvest food from Usdan’s fruit and vegetable gardens, as well as eggs from Usdan’s chickens, with a gardening specialist. Students will utilize the bounty of our gardens with a cooking instructor to create a variety of dishes for all to enjoy. Hildur Palsdottir

Dr. Hildur Palsdottir received a PhD in Biochemistry from the Max-Planck Institute of Biophysics where she studied Molecular & Cellular Bioenergetics 2000-2004. Hildur worked as a Research Scientist in the Life Sciences Division at the Lawrence Berkeley National Laboratory 2004-2007 followed by New York University Medical School, until she founded Sol Center in Port Washington in 2017. 

Hildur is a co-founder of Rewild Long Island and serves as Communications Director for the Steering Committee of Rewild. Hildur is dedicated to mindful environmental stewardship and enjoys lecturing in schools, corporations and community centers about mindful, sustainable and regenerative living. She contributes to the weekly Earth Matters column in the Island Now newspaper and co-hosts weekly Your Environment Now, interdisciplinary talk show on Zoom.

Hildur is a certified mindfulness meditation instructor, serves as President of the Board of Trustees for the Science Museum of Long Island and is dedicated to bringing mindfulness and sustainability to STEAM education. She leads guided nature walks at the Sands Point Preserve and teaches a middle school enrichment program there called Earth Expeditions. 

Hildur grew up in Iceland, lives in Port Washington and enjoys sharing her love of nature with her children Sandra (10) and Vincent (11) and 2 shih tzus.

This is Hildur’s first year of teaching at Usdan.

Tiffany Bryant-Fulton

Chef Tiffany Bryant-Fulton is a personal chef, owner of More Please and author of a vegetarian cookbook. She graduated culinary school 5 years ago, is ServSafe certified and has won several culinary awards. Chef Tiffany has worked at such restaurants as Hush Bistro and The View before starting her own company. This is Chef Tiffany’s first year working at Usdan as their chef instructor, but has been a chef educator with the nonprofit RISE Rockaway for over two years where she first discovered her love for teaching others the importance of healthy cooking and eating.
